Ingredients:
2 tbsp. oil
1 c. scallions, chopped
1 garlic clove, crushed
10 mushrooms, chopped
1/2 green pepper, chopped
1 tsp. salt
1/2 tsp. pepper
2 pds. plum tomatoes, chopped (@7)
1 tsp. sugar
1 tsp. parsley
1 zucchini, chopped
Directions:
– Heat oil.
– Add scallions, garlic, mushrooms, green pepper, salt, pepper. Saute lightly.
– Add tomatoes, sugar, parsley.
– Cover and simmer for 1 hour over low heat. Stir occasionally.
– Remove lid and continue cooking until sauce thickens.
Variations:
– May serve over baked spagetti squash.
